Almond Biscotti Recipe
This Almond Biscotti Recipe makes a tasty batch of crispy dunking cookies. To me it beats out any other recipe for almond biscotti. This biscotti recipe is very easy to make and awesome!
Consider making a double batch because they disappear fast.
Almond Biscotti Recipe
Ingredients
1/2 cup butter or margarine, softened
1 1/4 cups sugar, divided
3 eggs
1 teaspoon anise or vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
Dash salt
1/2 cup chopped almonds
2 teaspoons milk
Directions
In a mixing bowl, cream the butter and 1 cup of the sugar. Add the eggs, one at a time, beating well after each addition. Stir in the anise or vanilla.
Combine the dry ingredients and add to creamed mixture. Stir in the chopped almonds.
Line a baking sheet with foil and grease the foil.
Divide the dough in half and spread into two 12-in. x 3-in. rectangles on the foil. Brush with the milk and sprinkle with the remaining sugar.
Bake at 375 degrees F for 15-20 minutes or until golden brown and firm to the touch. Remove from the oven and reduce heat to 300 degrees F.
Lift rectangles with the foil onto a wire rack and cool for 15 minutes. Place on a cutting board and slice diagonally 1/2 in. thick. Place the slices with the cut side down on ungreased baking sheet. Bake for 10 minutes. Turn the cookies over and bake 10 minutes more. Turn the oven off, leaving the cookies in the oven with the door ajar to cool.
Store in an airtight container.
You can alter this recipe by using almond extract instead of the anise or vanilla for an even more intensely almond flavored recipe for almond biscotti.
You can also make it more gourmet like by dipping the baked almond biscotti into melted chocolate and sprinkling with chopped almonds.
