Almond Cherry Biscotti

Almond Cherry Biscotti is one of the best tasting biscotti you will ever make. It's especially nice at Christmas time. If you prefer a softer biscotti leave off the second baking.

Almond Cherry Biscotti Recipe

2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter
2 eggs
1 tablespoon milk
1/2 teaspoon vanilla extract
1 cup coarsely chopped blanched almonds
1 cup halved candied cherries

Preheat your oven to 350 degrees.

In a bowl, combine the flour, sugar, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs.

In another bowl, beat the eggs, milk and vanilla until well blended.

Stir the wet ingredients into the dry ingredients until blended. Stir in the almonds and the cherries. At this point the dough will be crumbly.

Divide the dough in half. Shape each half into a ball. Roll each ball into a 10 inch x 2 1/2 inch rectangle and place on an ungreased baking sheet.

Bake at 350 degrees F for 30-35 minutes or until golden brown. Carefully remove the biscotti to wire racks and allow them to cool for about 20 minutes.

Transfer the cooled biscotti to a cutting board and cut diagonally with a sharp knife into 3/4-inch slices. Place the slices on ungreased baking sheets and bake for 15 minutes or until firm. Remove to wire racks to cool. Store in an airtight container.

You can give Almond Cherry Biscotti a really great Christmas look by using half red and half green cherries. For really crunchy biscotti allow them to cool overnight.
