Almond Cookie Recipe

Each Almond Cookie Recipe listed here is for true almond lovers. The first one has a splash of brandy and the second one Amaretto liqueur. Each one makes real old time almond cookies.

Cut Out Almond Cookie Recipe

Ingredients

1/2 cup butter
1 egg, well beaten
1/3 cup finely chopped blanched almonds
1/2 cup granulated white sugar
1/2 tablespoon ground cinnamon
1/2 tablespoon ground cloves
1/2 tablespoon ground nutmeg
1/2 tablespoon lemon zest
2 tablespoons brandy
2 cups all-purpose flour

Directions

Preheat your oven to 325 degrees.

Cream the butter until light and fluffy. Add the well beaten egg, blanched almonds, sugar, brandy, spices and flour. Mix until the mixture is well combined.

On a lightly floured surface roll the almond cookie dough to 1/4 inch thick and cut with round cookie cutters dipped in flour. Place the almond cookies onto a parchment lined baking sheet.

Bake the almond cookies at 325 degrees for 8 to 10 minutes or until lightly browned.

These cookies are surprisingly delicious. Even with all the spices they have a refreshingly light taste. You can use vanilla extract if you don't have brandy and if you really love lemon you may want to add more zest.


Drop Almond Cookie

This cookie recipe doesn't have all the spices of the first one but it's delicious anyway.

Ingredients

1/2 cup butter, softened
1/2 cup white sugar
1 egg
1 1/4 cups all-purpose flour
1/2 cup ground almonds
2 teaspoons amaretto liqueur

Directions

Preheat your oven to 400 degrees.

In large bowl, cream together the butter and sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended. Drop the almond cookie dough by teaspoonfuls 2 inches apart on ungreased cookie sheets.

Bake the almond cookies 5 to 8 minutes in the preheated oven or until cookies are lightly colored.
