Amish Sugar Cookies Recipe
This Amish Sugar Cookies Recipe makes a cookie that is often called "sugar cakes", and with good reason.
The dough is more of a batter, and the cookies puff up as they bake.
These are not the stiff sugar cookies of other sugar cookie recipes. They take very little baking and stay soft.
In fact, you may want to chill the batter a little first, just to make it easier to scoop them out.

However you end up shaping them, they will probably disappear as fast as you can get them out of the oven. Be prepared!
Amish Sugar Cookies Recipe
Ingredients
3 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, melted
3 large eggs
1 cup buttermilk
1 12/ teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon kosher salt
Granulated sugar for garnish
Directions
Preheat the oven to 350F. Lightly coat cookie sheets with a little cooking spray.
With an electric mixer, cream the butter and the 2 cups of granulated sugar until light and fluffy. Add the eggs, one at a time, beating after each addition. Beat in the vanilla extract.
Whisk together the flour with the baking powder baking soda, cream of tartar and the salt. Add the flour mixture to the creamed butter and sugar alternately with the buttermilk until the ingredients are well blended.
Place by teaspoonfuls onto the prepared cookie sheets. Sprinkle each cookie with some of the remaining granulated sugar. Space the cookies at least 3 inches apart as they will spread and puff up. Bake for 10 to 12 minutes in the hot oven. The edges of the cookies should just begin to be turning golden brown.
Cool the cookies completely on wire racks, then store in airtight containers for up to 1 week.
Food For Thought - Add a little food coloring to the granulated sugar being used for a garnish. You can coordinate the
colors with the holidays, or just make a rainbow effect.
Good To Know - If you want to roll the cookies into balls, let the dough refrigerate at least 1 hour or overnight. The
butter will stiffen and make the dough easier to handle.
