Apple Cookie Recipe

This Apple Cookie Recipe uses chopped apples. Apple cookies are wonderful if you're looking for something a little different. The Vanilla glaze really compliments the cookies.

Apple Cookie Recipe

1/2 cup shortening
1 1/3 cups packed brown sugar
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1 cup chopped walnuts
1 cup raisins
1 cup chopped apples

Preheat your oven to 400 degrees. Grease cookie sheets.

Cream the shortening, packed brown sugar and the egg together. Combine the flour, baking soda and salt thoroughly. Add half of the dry ingredients to the shortening mixture. Blend in the milk and then add the remaining dry ingredients.

Add the chopped walnuts, raisins and the chopped apples and mix thoroughly.

Drop in equal amounts on the greased cookie sheet. Bake the cookies for 10 to 12 minutes. Allow the cookies to cool and then spread with the Vanilla Glaze.

Apple Cookie Vanilla Glaze

1 1/2 cups confectioners' sugar
2 1/2 teaspoons milk
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1 teaspoon butter

Melt the butter and add to the rest of ingredients. Mix until creamy.

Sometimes I add cinnamon just for a little extra zip. Apples and cinnamon compliment each other. This is a soft cookie so don't over bake it and don't store it tightly closed. I like this Apple Cookie Recipe.
