Applesauce Bar Cookie
This Applesauce Bar Cookie recipe yields a moist, spicy bar cookie that is almost cake like. It's quick and easy and makes a great after school snack for the kiddies. Applesauce Bar Cookie Recipe1/4 cup butter or margarine, softened 1 1/2 cups confectioners' sugar Preheat your oven to 350 degrees. Grease an 8x8 inch-baking pan. In a medium bowl mix together the butter, brown sugar and the egg until smooth. Stir in the applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan. Bake the bar cookies for 25 minutes in the preheated oven, or until the edges are golden. Cool in the pan over a wire rack. For The IcingIn a small bowl mix together the confectioners' sugar and margarine. Stir in the vanilla and milk until the mixture is smooth. Spread the icing over the cooled bars and then cut into squares. Like I said these bars are a great after school snack. However if you want to include them in a brown bag lunch it's better to just sprinkle them with powdered sugar instead of using the icing.
