Bar Cookie Recipes


A bar cookie is kinda' like a cross between a cake and a cookie. Most bar cookie recipes call for baking in a pan and then, after cooling, they are cut into bars, triangles or squares.


They’re really not that difficult to bake but there are a few things you have to watch out for.

The first thing is don’t over mix the dough. This will cause an overly crusty top. Not a big thing if you don’t mind crusty tops.

Another thing about the dough is that most recipes makes stiff dough that makes it a little difficult to get it in the pan smooth with an even depth. But it has to be smooth and an even depth or you'll get uneven baking.

Proper baking time is also important and with a dark colored cookie it’s sometimes hard to tell when it’s done. Over baking will make a dry and crumbly cookie.

When they are baked the proper amount of time the surface will have a dull appearing finish and if you poke it with your finger the imprint will remain.

Lighter bar cookie recipes that are more cake like can be tested for doneness with a wooden pick just like a cake. If the pick comes out clean then they're done.

I can still remember my first attempt at baking brownies. I must have over mixed and over baked because I had an extremely crusty top and a dry and crumbly cookie. But I also left out the butter so who knows. I just trashed it.

I've gotten better with bar cookie recipes since then and have moved my expertise up a notch with layered bar cookies which I think are the elite of the bar cookie world.
