Basic Scone Recipe
Many variations of scones can be achieved from a basic scone recipe. I have two listed here. One uses all butter for the fat and the other uses a combination of butter and vegetable shortening.
Use the shortening version if you use other flavorings and don't want the butter flavor to dominate.
Basic Scone Recipe With Butter
3 cups self-rising flour
1 tsp. baking powder
Dash of salt
1 1/2 tsp. Sugar
6 tbsp. sweet butter
1/2 cup milk
Preheat oven to 375 degrees.
Sift the flour, baking powder and salt. Add the sugar. Cut in the butter with a fork or pastry blender to corn meal sized mixture. Add the milk.
Roll the dough out to a one-inch thickness. Cut into 2-inch circles.
Place on greased cookie sheet and bake for 15 to 20 minutes or until lightly golden.
Yield: About 8 scones.
Basic Scone Recipe With Shortening
2 cups Flour
1 tablespoon Baking powder
1/2 teaspoon Salt
2 tablespoons Sugar
5 tablespoons Butter
1/4 cup vegetable Shortening
1/3 cup Milk
1 Egg
Sift together, twice, the flour, baking powder, salt, and sugar. Blend with pastry blender the butter and shortening into the sifted ingredients.
Make a "well" in the center of the ingredients and stir in the milk that is mixed with the egg. Mix with fork to make a soft dough. Knead the dough lightly on a floured board. Break into two pieces.
Flatten each out to 3/4 inch thick circle. Cut the circle into 8 pie wedge shapes (like pizza). Repeat the process on the other circle. Preheat oven to 450. Preheat cookie sheet in oven for 5 minutes. Bake at 450 for 10-15 minutes until lightly brown.
With a basic scone recipe you can make infinite varieties of scones just by adding different flavorings, add-ins such as nuts or dried fruit and different toppings and glazes.
