Best Chocolate Cookie Recipe

This is the best chocolate cookie recipe I've run across in a long time. Whenever the urge for a rich and chewy chocolate cookie strikes me this is my go to cookie recipe.

It's quick and easy with a perfect balance between chocolaty flavor and sweetness.

The semisweet chocolate pieces add an almost fudge-like quality to these cookies as they melt into the dough with the butter and sugar.

This is a great recipe to make with kids. The cookie dough can be rolled into balls of any size, perfect for little hands just learning to cook. They will be more than impressed when that first batch of warm, chewy cookies comes out of the oven!

Ingredients

7 ounces all purpose flour
7 tablespoons unsalted butter, cut into small pieces
7 squares (1 ounce each) semisweet chocolate, finely chopped
2 large eggs
1/3 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon kosher salt

Directions

Preheat the oven to 350F. Use shortening or cooking spray to grease 2 cookie sheets, then set them aside.

In a large bowl, sift together the flour, baking powder, salt, sugar and the unsweetened cocoa powder. Add the chopped pieces of semisweet chocolate and the pieces of the cold butter to the flour mixture and stir to combine the ingredients.

Break the eggs into a small bowl and briskly beat them with a fork. When they are well beaten, add them to the flour mixture and stir until it forms a stiff dough.

Wet your hands with cold water and roll the dough by tablespoons into balls. Place the balls on the prepared cookie sheets about 3 inches apart.

Bake the cookies for 13 to 15 minutes, until the centers look dry. They should be a little firm on the outside and a little soft on the inside. Transfer the cookies to wire racks to cool.

Good To Know - These cookies will last up to 3 days in a tightly covered container.

If you want to freeze them, pack them in a sealable baggie and squish out all the air that you can, then wrap the baggie in several layers of plastic wrap to keep out the moisture.

For an easier to make chocolate cookie try the chocolate cake mix cookie. Another favorite of mine that ships well is chocolate cherry biscotti.
