Best Cookie Recipe

This is from my best cookie recipe file. Imagine chewy chocolate chip cookies with a hint of peppermint and you have the recipe for these best ever cookies.

Lots of rich ingredients go into them - milk chocolate, whole butter and cocoa powder work their magic after about 10 minutes in the oven. These chocolate mint treats will fly off the racks - don't say we didn't warn you!

For lovers of peppermint, this is your chance to shine. Our recipe calls for both vanilla and peppermint extract, but if you really want to make a statement, delete the vanilla and add 1 teaspoon extra of the peppermint.

It will take your breath away!

The best Mint Chocolate Cookies

Ingredients

2 cups all purpose flour
1/2 cup whole wheat flour
1/2 cup unsweetened cocoa powder
2 cups milk chocolate chips
1 cup unsalted butter, softened
1 cup light brown sugar
1 cup granulated sugar
1/2 cup vegetable oil
1/4 cup non fat dry milk
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1 teaspoon vanilla extract
2 1/4 teaspoons peppermint extract

Directions

Preheat the oven to 350F. Use vegetable oil or cooking spray to grease 2 cookie sheets, then set them aside.

Whisk together the all purpose flour, whole wheat flour, unsweetened cocoa powder, non fat dry milk, baking soda and the kosher salt in a medium bowl. Set this mixture aside.

With an electric mixer on medium high speed, cream the softened butter with the light brown sugar and the granulated sugar until fluffy. Gradually pour in the vegetable oil, and then the eggs, one at a time. Lastly, add the vanilla extract and the peppermint extract. Mix for about 30 seconds until the flavorings are well incorporated.

Use a wooden spoon to stir in the flour mixture. When it has been well blended, fold in the milk chocolate chips and stir well.

Drop tablespoons of the dough onto the prepared cookie sheets, at least 2 inches apart. Bake in the preheated oven for 8 to 10 minutes. Let the cookies sit on the sheet pans for a few minutes before removing them to wire racks to cool completely.

On Your Own - If you like your chocolate chip cookies gooier, bake them a little less, about 7 minutes, and don't let them sit on the baking sheets. Remove them immediately to the wire racks to cool.

Good To Know - These cookies can be stored about 3 days in a tightly covered container, but I don't recommend freezing them. They won't be around long enough anyway!
