Best Ever Chocolate Chip Cookie
If you don't think this is the best ever chocolate chip cookie just bake up a batch and you'll agree. The combination of chocolate chips, coconut and macadamia nuts are super.

Most people fall into two camps when it comes to chocolate chip cookies: soft and gooey or crisp
and chewy.
This is definitely a gooey cookie lovers dream, but for you crispy people out there just bake them for 15 minutes and you will be in crispy cookie heaven!
Best Ever Chocolate Chip Cookie
Ingredients
4 1/2 cups all purpose flour
1 cup of unsalted butter, softened
1/2 cup vegetable shortening or oil
1 1/2 cups light brown sugar, packed
1 1/2 cups granulated sugar
2 teaspoons baking soda
1 teaspoon kosher salt
4 teaspoons vanilla extract
4 large eggs
2 cups semisweet chocolate chips
1 cup flaked coconut
1 cup macadamia nuts, chopped
Directions
With an electric mixer, cream together the butter, vegetable shortening, brown sugar and the granulated sugar until fluffy and smooth. With the mixer running at medium speed, add the eggs, one at a time. When all the eggs are incorporated, add the vanilla. Mix for 30 seconds more.
Whisk together the flour with the baking soda and kosher salt. With a wooden spoon, stir the flour into the butter and sugar mixture. Fold in the chocolate chips, the coconut and the chopped macadamia nuts, stirring well to blend all the ingredients.
Cover the bowl with plastic wrap and refrigerate the dough for 1 hour. This will allows the butter to solidify and the dough to stiffen enough so that the cookies don't "melt" when they go into the hot oven.
Preheat the oven to 350F.
Roll the chilled dough into 1-inch balls and place them at least 2 inches apart on ungreased cookie sheets. Bake them for about 8 minutes, and then let them sit on the cookie sheet for a few minutes before transferring them to wire racks to cool completely.
Food For Thought - A classic choice for macadamia nuts is white chocolate. Try using the same amount of white chocolate chips the next time you make these cookies - it really enhances the subtle flavor of the macadamia nuts.
