Best Peanut Butter Cookie

Cream together the butter, peanut butter, white sugar and brown sugar. Add the 1 teaspoon Watkins vanilla. Beat in the eggs one at a time. Be sure the first egg is well incorporated before adding the second.

In a separate bowl sift together the flour, baking powder, baking soda, and salt. Stir the dry ingredients into the wet ingredients. Place the cookie dough in the refrigerator and refrigerate for at least 1 hour.

Roll the cookie dough into 1 inch balls and place the balls on the lined cookie sheet. Flatten each ball with a fork making a criss-cross pattern. Bake the cookies in a preheated 375 degree oven for about 10 minutes or until the cookies begin to brown around the edges. Do not over-bake.

Variation: You can make an easy and delicious variation of this recipe by rolling the dough balls in granulated sugar before flattening them with the fork.

This recipe makes amazing cookies that are very soft if not over baked. Even the next day!
