Blueberry Scone Recipe

A blueberry scone is good for you! That’s because blueberries are good for you. Of all fruits and vegetables blueberries are among the top providers of antioxidants.

What better way to get that benefit than in a blueberry scone?

Blueberry Scone Recipe

3/4 cup Dried Blueberries
1 3/4 cups Flour – sifted
2 1/4 teaspoons Baking powder
1 tablespoon Sugar -- plus a little more
1/2 teaspoon Salt
1/4 cup Butter
2 Eggs
1/3 cup Cream

Place the blueberries in a bowl with enough hot water to cover. Soak for about 5 minutes.

Preheat oven to 450 F.

Drain the blueberries.

Mix together the flour, baking powder, 1 Tbsp sugar and salt in a bowl. Cut in the butter, using a pastry blender or two knives. Stir in the drained blueberries.

In a separate bowl, beat the eggs. Reserve 2 Tbsp and add the remaining eggs to the dry ingredients. Pour in the cream and combine with a few swift strokes.

Place the dough on a slightly floured board and pat or roll to a thickness of 1/2 inch. Cut with a knife into diamond shapes or into 2-inch rounds.

Brush with the reserved egg and sprinkle with sugar. Bake for 15 minutes.



This blueberry scone recipe adds oat bran. So in addition to the antioxidants of the blueberries you get fiber from the bran. Throw in the health benefits of the yogurt and you have a truly healthy scone.

Oat Bran Blueberry Scone Recipe

1 1/2 cups Oat bran
1 1/2 cups All-purpose flour
1/3 cup Light brown sugar – packed
2 teaspoons Baking powder
1 teaspoon Cream of tartar
1/2 cup Butter
2 Eggs
1/3 cup Plain yogurt
1 teaspoon Vanilla extract
1 1/2 cups Blueberries

Preheat oven to 400 degrees. Grease a baking sheet.

In a large bowl, mix the bran, flour, sugar, baking powder and cream of tartar together. Cut in the butter.

In a separate bowl, mix the eggs, yogurt and vanilla extract. Blend into the dry ingredients.

Fold in the blueberries carefully. Pat the dough into a circle on the baking sheet. Cut into wedges, wiping the knife each time. Bake for 20 to 25 minutes.

This blueberry scone recipe makes 8 servings.
