Butter Cookie Recipe
If it weren't for the egg and the almond extract in this butter cookie recipe it would be a shortbread cookie. Neither uses a leavener and both are extremely dependent on good quality butter.

Butter Cookie Recipe
1 cup (2 sticks) butter
1/2 cup sugar
1 egg
1 tsp. almond extract
2 1/3 cup all-purpose flour
Preheat your oven to 350 degrees.
Cream the butter. Gradually add the sugar and beat until light and fluffy. Beat in the egg and the almond extract.
Gradually blend in the flour.
Fill a cookie press with 1/4 of the butter cookie dough at a time; form desired shapes on ungreased cookie sheet.
Bake the butter cookies in a preheated 350 degrees oven 8 to 10 minutes. Remove immediately to wire rack to cool.
This recipe makes about 7 dozen butter cookies.
About The Butter
Butter along with the almond extract is the flavoring in this butter cookie. Do not substitute. You should also buy the best butter you can find. I personally use Land 'O Lakes brand.
Freshness counts too.
All butter has a use by date so be sure and check yours before you prepare your butter cookie recipe. You certainly don't want to use old tasting butter.
In my opinion freshness of the butter is most important.
