Butterscotch HaystacksButterscotch haystacks are an easy to make no bake cookie. They consist basically of chow mein noodles coated with melted butterscotch chips. You can vary that formula as you wish though. Salted Peanut Butterscotch Haystacks Recipe1 cup butterscotch chips Melt the butterscotch chips with the peanut butter. Stir in the salted peanuts and chow mein noodles. Drop by teaspoonfuls onto waxed paper. Let cool. Microwave Butterscotch Haystacks Recipe1 cup Butterscotch Chips Line a cookie sheet with wax paper. Place the butterscotch chips, peanut butter chips and shortening in medium microwave-safe bowl. Microwave at HIGH (100%) for 1 minute and stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until the chips are melted and the mixture is smooth when stirred. Immediately add the chow mein noodles and stir to coat. Drop the mixture by heaping teaspoons onto the prepared cookie sheet or into paper candy cups and let them stand until firm. They will firm up quicker in the refrigerator. Store in a tightly covered container in the refrigerator. Yields about 2 dozen. Variation:Chocolate Haystacks: Substitute 1 cup Semi-Sweet Chocolate Chips or Milk Chocolate Chips for butterscotch chips. Proceed as directed above with the peanut butter chips, shortening and chow mein noodles. Butterscotch Haystacks with Chocolate Chips5 oz Chinese Crunchy Noodles (about 3 cups) Place the butterscotch chips and the peanut butter in a microwave proof bowl. Microwave on high for about 1 1/2 minutes. Stir until all the chips are melted. If it needs more microwaving, do it in 20 second increments and stir. Pour Crunchy noodles into melted butterscotch/peanut butter mixture. Stir to coat. Add more noodles if there is excess candy coating in the bowl but don't add too much or each piece will not be well coated. Drop spoonfuls of coated noodles on wax paper or parchment paper to form small mounds. Sprinkle with mini chocolate chips. If you don't mind getting your hands dirty you can form Butterscotch Haystacks around the bottom of muffin cups. This will make handy little containers for all sorts of goodies that will please the kiddies. |
