Cake Mix Cookie Bar

Cookie bars are easy cookies to make. But a Cake Mix Cookie Bar is even easier. The cake mix supplies most or all of the dry ingredients. Just add the liquid and additional flavoring if you like.

Oatmeal Cake Mix Cookie Bar

1 pkg. yellow or white cake mix
1/2 cup brown sugar
2 cup oats
1 cup oil
1 egg
3/4 cup caramel ice cream topping

Mix the cake mix, brown sugar and oats together in large bowl. Add the oil and the egg and mix well. Pat 1/2 of the dough into a greased and floured 13 x 9-inch pan. The dough will be gooey. Spoon the caramel over the dough. Crumble the rest of the dough over the topping by hand. Bake at 350 degrees for 30 to 35 minutes. Cool and cut into bars.


Pecan Pie Cake Mix Cookie Bar

1 pkg. yellow cake mix
1/2 cup butter or margarine, melted
1 egg

Filling:
2/3 cup reserved cake mix
1/2 cup firmly packed brown sugar
1 1/2 cup dark corn syrup
1 tsp. Vanilla
3 eggs
1 cup chopped pecans

Grease the bottom and sides of a 9 x 13-inch baking pan. Reserve 2/3 cup dry cake mix for the filling. In a mixing bowl combine the remaining dry cake mix, butter and 1 egg. Mix until crumbly. Press into the prepared pan. Bake at 350 degrees for 15 to 20 minutes until light golden brown.

Meanwhile prepare the filling: In a large mixer bowl combine all of the ingredients except the chopped pecans. Beat at medium speed 1 to 2 minutes. Pour the filling over the partially baked crust. Sprinkle with the pecans. Return to the oven and bake for 30 to 35 minutes until the filling is set. Cool. Cut into bars.


Butterscotch Cake Mix Cookie Bar

1 pkg. regular yellow cake mix
1/4 cup brown sugar
1/2 cup chopped nuts
1 cup butterscotch chips
3/4 cup oil
1 egg

Preheat oven to 350 degrees. Mix all of the ingredients in a large bowl with a wooden spoon. Spread into 10 x 15-inch cookie sheet. Bake 15 to 20 minutes. Cool and cut.


Cherry Cake Mix Cookie Bar

Generic cake mix
2 eggs
1 tsp. Vanilla
Cherry pie filling

Mix the cake mix, eggs and vanilla by hand (do not add water). Fold in the cherry pie filling. Bake on greased cookie sheet 30 minutes at 350 degrees. Cut into bars.


Gooey Cake Mix Cookie Bar

1 chocolate cake mix
1 stick margarine
2 eggs
2 eggs
1 (8 oz.) bar cream cheese
1 box powdered sugar

Mix together the chocolate cake mix, margarine and 2 eggs and press onto greased cookie sheet. Mix the other 2 eggs, cream cheese and powdered sugar and pour over the cake mix. Bake at 350 degrees for 35 minutes. Cool and cut into bars.
