Cake Mix Cookies
I’ll have to admit that Cake Mix Cookies are something new to me. I’ve found out, however, that Betty Crocker hit America’s grocery shelves in 1947 with a mix labeled Ginger Cake and the name quickly evolved into Gingerbread Cake and Cookie Mix.
So I guess cake mix cookies have been around a while. My cousin Sandra and myself, along with her daughter Beth and her husband Jim had a cookie session recently and it was all with cake mixes. I didn’t have high expectations. All I wanted was just to see how they would come out. Boy, was I surprised! First of all they’re fall down easy. Just a box of mix, a couple eggs and some oil and you have cookie dough. It’s almost like cheating. I had previously researched recipes and we had five or six to experiment with. The reason I had so many was because they were all different! Even though a box of cake mix and two eggs was universal the oil ranged from 1/4 cup to 1/2 cup. One included a couple tablespoons of water. Baking temperatures ranged from 350 degrees to 400 degrees and baking times from 8 minutes to 15 minutes. I just knew that some of them couldn’t be right. But surprise, surpise. They all worked! We also experimented with add-ins. We made almond cookies by adding in toasted almonds, coconut with shredded coconut and chocolate chip just by adding the chips. They all worked just fine which by now I expected. We did determine that additional flavoring helped the coconut and almond. The one I didn’t expect to work was the Kahlua. We added in 1/4 cup and the dough looked entirely to lose. But once again they worked just fine even though they did spread more because of the additional liquid. This is the recipe I will use in the future:
Cake Mix Cookies1 Box Cake Mix 2 Eggs 1/2 cup Oil 2 Tablespoons Water
Preheat oven to 350 degrees. Combine ingredients and drop by heaping tablespoons onto a cookie sheet. Bake for 15 minutes. Allow to cool 1 minute on the sheet and then move to a cooling rack to complete cooling.
Even though cake mix cookies are new to me I’ll certainly be doing more. I can’t wait to try butter pecan cake mix with pecan pieces added in. With all the types of mixes available plus add-ins there’s almost an infinite variety of Cake Mix Cookies to try.
