Caramel Filled Chocolate Cookies

Caramel Filled Chocolate Cookies are delicious chocolate cookies with a caramel candy tucked inside. The pecans on top and the white chocolate drizzle make them pretty as well as more delicious.

Caramel Filled Chocolate Cookies

1 cup butter, softened
1 cup plus 1 Tbsp Sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking soda
1 1/4 cups chopped pecans, divided
1 (13 ounce) package Rolo candies
4 (1 ounce) squares white chocolate, melted

Preheat your oven to 375 degrees.

In a large mixing bowl, cream the butter, the 1 cup of sugar and the brown sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa and baking soda. Gradually add the flour mixture to the creamed mixture, beating just until combined. Stir in 1/2 cup of the pecans.

In a small bowl combine the remaining sugar and pecans.

Shape a tablespoonful of dough around each piece of Rolo candy, forming a ball. Dip each cookie halfway into the pecan mixture. Place the cookies nut side up 2 inches apart on parchment lined baking sheets.

Bake the cookies at 375 degrees for 7-10 minutes or until the tops are slightly cracked. Allow the cookies to cool on the baking sheet for about 3 minutes before removing to wire racks to cool completely.

Drizzle with melted white chocolate.

Caramel Filled Chocolate Cookies are really GOOD! Plus they are pretty enough to give as cookie gifts at Christmas time.
