I prefer the second recipe, made with shortening, because it has raisins and nuts added. I prefer Pecans but walnuts would be nice. Or for that matter any nut you like.
Chewy Oatmeal Cookie Recipe
1 1/2 cups flour
1 tsp. Salt
1 tsp. Soda
1 cup margarine
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp. Vanilla
3 cups oats
Preheat your oven to 350 degrees.
Mix together the 1 1/2 cups flour, 1 teaspoon salt and 1 teaspoon baking soda.
Combine the 1 cup margarine, 1 cup white sugar, 1 cup brown sugar, 2 eggs and 1 teaspoon vanilla. Add to the flour mixture.
Mix the 3 cups of oats into the mixture.
Drop by tablespoons full onto an ungreased cookie sheet.
Bake at 350 degrees for 8 to 10 minutes or until the edges begin to brown and the centers of the cookies are still soft. For a chewy cookie you must not over bake.
Good And Chewy Oatmeal Cookie Recipe
1 1/2 cups shortening
1 1/4 cup sugar
2 eggs
2 Tbsp. molasses
1 tsp. each soda, salt and cinnamon
1 3/4 c. flour
2 cups oats
1 cup cut up raisins
1/2 cup nuts
Mix the shortening, sugar, egg and molasses and set aside.
Thoroughly combine the soda, salt, cinnamon and flour. Stir into the shortening mixture.
Stir in the raisins, oats and nuts.
Drop on a greased cookie sheet about 2 inches apart. Bake for 8 to 10 minutes or until the edges begin to brown and the centers are still soft.
Do Not Over Bake! The key to a Chewy Oatmeal Cookie Recipe is not to over bake.
