Chewy Oatmeal Raisin Cookie
If you prefer your oatmeal cookies on the chewy side (and I do) then this Chewy Oatmeal Raisin Cookie Recipe is the one for you. This one includes oat bran for additional fiber and chewiness.
The raisins add a texture contrast and even more flavor.
Chewy Oatmeal Raisin Cookie Recipe
1-1/4 cups firmly packed brown sugar
1 cup (2 sticks) margarine, softened
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
1-3/4 cups all-purpose flour
3/4 cup Quaker Unprocessed Oat Bran
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt (optional)
2-1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1-1/3 cups raisins
Heat oven to 375° F.
In a large bowl beat the brown sugar, margarine and granulated sugar with an electric mixer until creamy. Add the eggs and vanilla and beat well.
In a separate bowl combine the flour, bran, cinnamon, baking soda and salt and mix well.
Add the dry ingredients to the margarine-sugar mixture and mix well. Stir in the oats and the raisins and mix well.
Drop by rounded measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheets. Bake 9 to 10 minutes, until light golden brown. (Centers will be soft. Do not over bake)
Cool the cookies 1 minute on the cookie sheets and then remove to a wire rack. Cool the cookies completely. Store tightly covered.
