Chocolate Billionaires

Chocolate Billionaires are candy-like no bake cookies. They are similar to Rice Crispy Treats but with caramel. The pecans add even more crunch and the chocolate coating makes them super.

Chocolate Billionaires Cookie Recipe

1 (14 ounce) package caramels
3 tablespoons water
1 1/2 cups chopped pecans
1 cup crisp rice cereal
3 cups milk chocolate chips
1 1/2 teaspoons shortening

Line two baking sheets with parchment paper spray the paper with cooking spray and set aside.

In a large heavy saucepan, combine the caramels and the water. Cook and stir over low heat until smooth. Stir in the pecans and cereal until coated. Drop by teaspoonfuls onto prepared pans. Refrigerate for 10 minutes or until firm.

Meanwhile, in a small heavy saucepan, melt the chocolate chips and shortening over low heat stirring until smooth. Dip the cookies into the chocolate, coating all sides. Place on pans and refrigerate until set. Store in an airtight container.

This recipe sounds like it's a lot of work but it's really easy. The results are certainly worth twice the effort.
