Chocolate Christmas Cookie
This Chocolate Christmas Cookie is absolutely delicious. The crackled coating from the confections' sugar coating also makes them attractive. A great cookie on your Christmas Cookie tray!
These are fun to make with the kiddies too. Let them roll the dough balls because it'll leave a messy chocolate coating on their hands. Kiddies love messy!
Super Delicious Chocolate Cookie Recipe
Ingredients
4 (1 ounce) squares unsweetened chocolate
1/2 cup vegetable shortening
2 cups white sugar
2 teaspoons vanilla extract
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup chopped walnuts or pecans
3/4 cup confectioners' sugar
Directions
Melt the unsweetened chocolate squares and vegetable shortening in a saucepan over low heat. Remove the saucepan from the heat and mix in the sugar and vanilla extract.
Beat in the eggs 1 at a time.
In a bowl, sift together the all-purpose flour, baking powder and salt.
Stir in the chocolate mixture and chopped walnuts or pecans.
Chill the dough in the refrigerator 3 hours or overnight.
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Place the confectioners' sugar in a bowl. Roll the dough into 1 inch balls and then roll the dough balls in the confectioners' sugar to coat. Arrange the dough balls 3 inches apart on the prepared cookie sheets.
Bake the cookies for 12 to 15 minutes in the preheated oven. The cookies will look soft when removed from the oven. Transfer the cookies to a wire cooling rack to cool completely. Enjoy!
Don't substitute butter for the shortening. If you want more butter flavor use butter flavored shortening.
These cookies are best when completely cooled instead of hot out of the oven. Next day is even better because they develop a crunchy outside and a chewy, almost brownie like, inside.
