Chocolate Cookie Bar Recipe

This chocolate cookie bar recipe will delight all chocolate lovers. Make your own chocolate toffee topping for these quick and easy crunchy, nutty cookie bars.

The base is made from graham cracker crumbs, which you can buy already ground, or make your own from leftover graham crackers.

Finish them up with semisweet chocolate chips and chopped walnuts. These treats can be cut into big or little bars, or even bite-sized treats for special parties.

Chocolate Toffee Crunch Bars

Ingredients for the cookie base

2 cups graham cracker crumbs
1/4 cup light brown sugar, packed
1/2 cup unsalted butter, melted

Ingredients for the topping

1 cup unsalted butter
1 cup light brown sugar, packed
1 cup finely chopped walnuts
12 ounces semisweet chocolate chips

Directions

Preheat the oven to 350F.

In a medium sized bowl, combine the graham cracker crumbs with the light brown sugar and the melted butter. When they are thoroughly mixed, pat the dough evenly over the bottom of an ungreased 9 x 13 baking pan.

Bake for 6 to 8 minutes in the preheated oven.

In a small saucepan, melt the unsalted butter and add the brown sugar. Cook over moderate heat, whisking constantly, until the mixture comes to a boil.

Remove the pan and immediately pour the butter and sugar over the graham cracker cookie base. Bake for another 10 minutes.

Remove the baking pan from the oven and quickly sprinkle the semisweet chocolate chips evenly over the top of the cookie and let it set a couple of minutes.

When the chocolate chips have softened, carefully spread melted chips over the cookie, and then finish with the chopped walnuts.

Let the cookie cool before cutting it into bars.

Individual bars can be wrapped in plastic wrap and frozen for up to 3 weeks. Let them come to room temperature before serving.

Food For Thought - Once you get used to making the basic recipe, experiment with different toppings.

One favorite is to use chopped up English toffee bars and peanut butter chips in place of the walnuts and chocolate chips.

And for a riot of swirling color, use mini candy coated chocolates, such as mini M&M's instead of the chocolate chips. Gently swirl them over the top for a Technicolor effect!
