Chocolate Ganache Recipe

If you're looking for a new way to consume more chocolate then give this chocolate ganache recipe a try.

Don't let the fancy French name intimidate you. It's only chocolate melted with hot cream.

Chocolate Ganache Recipe

1 Cup heavy whipping cream
7 ounces chocolate finely chopped

Heat the cream over medium heat until it just reaches a boil. Remove from the heat and immediately add the 7 ounces of finely chopped chocolate and gently swirl the pan to melt the chocolate. Do not stir. Allow the ganache to rest for 5 minutes.

After the 5 minutes, whisk slowly to combine. Allow it to sit for a minute or so more and then stir until smooth.

Ganache makes a super delicious cookie icing. While the ganache is still warm spread over your cookies. It will cool to a smooth shiny glaze.

Chocolate truffles are also made from ganache. To make your own truffles:

First line a baking sheet with parchment paper.

Transfer the ganache mixture to a bowl and refrigerate for 45 minutes, stirring every 15 minutes. After the 45 minutes keep refrigerated another 15 minutes stirring every 5 minutes.

Form the mixture into 1-inch balls and place on the parchment lined baking sheet. Chill the balls for about 15 minutes or until they firm up. Roll in cocoa powder.

These confections were so named because the original, cocoa-coated and rather misshapen truffle resembled the famous and rare fungus of the same name.

Some truffles are dipped in melted white or dark chocolate, which, after cooling, becomes a hard coating.
