Chocolate Icing Recipe
The chocolate and sour cream combination in this chocolate icing recipe makes a taste combination that's hard to beat. This icing recipe is especially great on peanut butter cookies.

Chocolate Icing Recipe
6 oz. Hershey semi-sweet chocolate pieces
1/4 cup butter
1/2 cup sour cream
1 tsp. Vanilla
1/4 tsp. Salt
3 cups confectioners' sugar, sifted
In the top of a double boiler, melt the chocolate pieces along with the butter over hot water. Remove from the heat and stir in the sour cream, vanilla and salt.
Gradually beat in confectioners sugar until icing is of spreading consistency.
A Little About Sour Cream
Traditionally, letting fresh cream sour naturally made sour cream. Natural occurring bacteria in the cream including, Streptococcus, Leuconostoc, as well as various Lactobacilli created the acid flavor in the cream.
A down side to the naturally made product is that other bacteria may start to grow as well and give the product an "off" flavor.
Today, inoculating pasteurized cream with a pure mixture of bacteria produces commercially made sour cream. Once the product has thickened it is pasteurized again and the bacteria is killed.
That's why you can't use commercially prepared sour cream as a starter for your homemade version.
