Chocolate Mint Cookie

Chocolate Mint Cookie

This chocolate mint cookie is the perfect cookie for holidays or birthdays. You use purchased chocolate covered thin mints set in the center of still-warm chocolate chip cookies.

As the mints start to soften, take a toothpick and swirl through the mint to make your own festive design.

The green filling of the mints adds a shot of color to these quick and easy cookies.

Chocolate Mint Cookies

Ingredients

2 1/2 cups all purpose flour
3/4 cup unsalted butter
1 1/2 cups light brown sugar, packed
2 cups bittersweet chocolate chips
2 large eggs
2 tablespoons vanilla extract
1 1/4 teaspoons baking soda
1/2 teaspoon kosher salt
3 packages (4.5 ounce) chocolate covered thin mints, such as Andes

Directions

In a small bowl, combine the flour, baking soda and salt, and then set it aside.

Melt the butter in a small saucepan over medium heat, and then add the sugar and vanilla, stirring frequently until the sugar begins to dissolve. Add the chocolate chips, and stir until they are melted. Pour the ingredients into a large bowl and set it aside to cool for a few minutes.

With an electric mixer, beat in the eggs, one by one, until the mixture is well combined. With a wooden spoon, stir in the flour mixture and thoroughly blend all the ingredients.

Cover the bowl tightly with plastic wrap and refrigerate at least 1 hour. The dough should be chilled enough that you can work it with your hands.

Preheat the oven to 350F. Lightly coat cookie sheets with shortening or cooking spray. Roll pieces of the cookie dough into 1 inch pieces and lay them on the cookie sheets at least 2 inches apart.

Bake the cookies for 8 to 10 minutes. As they come out of the oven, gently press a thin mint on to the top of each cookie. Leave the cookies on the sheet pan.

After about 1 minute, as the mint begins to soften, swirl over the center with a toothpick or the back of a small spoon to make a design from the green filling.

Let the cookies cool completely before storing them in an airtight container.

Food For Thought - Don't be discouraged if you can't find chocolate covered thin mints - these cookies are great even without them, plus you can always substitute a chocolate covered candy of your choice. Try red and green mini M&M's for the holidays.
