Chocolate No Bake Cookie Recipe
This Chocolate no bake cookie recipe is a perfect idea for kids' parties and family holiday activities.
Chocolate powder and oats are blended with sugar and butter, rolled up into balls and refrigerated. They can be dipped in confectioners' sugar or coconut, and can look like fancy truffles by coating them in cocoa powder. Make these a few times by the recipe and then think about what you would like to add - how does peanut butter sound? No Bake Chocolate Cookie RecipeIngredients1 3/4 cup rolled oats or quick oats Cream together the softened butter and the granulated sugar. Add the unsweetened cocoa powder, the vanilla extract and the strong coffee. Stir in the oats, and blend all the ingredients together. Lay a sheet of waxed paper on a cookie sheet. Roll the dough mixture into balls, about 1 inch in diameter. You should have about 36 cookies. Refrigerate the cookies on the sheet pan for about 30 minutes. This gives the softened butter a chance to firm up again. Spread the confectioners' sugar in a shallow plate, and roll each chilled cookie in the sugar. Store refrigerated in an airtight container. On Your Own - It's a little bit sticky, but try using peanut butter instead of the unsalted butter. Creamy style has a similar texture, but I really prefer extra crunchy! Food For Thought - The strong coffee can get a little lost in the oats, even if it's espresso. If you want more chocolate flavor, try using a chocolate flavored liqueur, or if kids are involved, add extra cocoa powder. Good To Know - Your hands can get covered in dough in no time - keep a bowl of warm water handy to dip encrusted fingers in between rolls. Wet hands can actually make the rolling a little easier.
