Chocolate No Bake Cookie

This chocolate no bake cookie is a quick and easy treat but you don't have to turn on the oven. It's a tasty combination of oats, coconut and cocoa and is right up your alley - or, on your kitchen counter, actually.

These cookies need time to chill, and freezing them a bit will hasten the process.

If you need to supply cookies for a party or holiday event, box these up after they're frozen in an airtight container to have ready when you need them. Just be sure to let them come to room temperature before serving them!

Chocolate No Bake Cookie

3 cups rolled oats
1 cup coconut, flaked
2 cups granulated sugar
5 tablespoons unsweetened cocoa powder
1/2 cup unsalted butter
1/2 cup evaporated milk

Combine the oatmeal and coconut in a large bowl and whisk until they are well mixed. Set the bowl aside.

In a medium sauce pan, melt the butter then add the evaporated milk and cocoa powder. Stir in the sugar, and then boil the mixture for exactly 2 minutes, stirring constantly.

Pour the boiled mixture over the oats and coconut and rapidly mix all the ingredients until they are well blended. Quickly drop them by spoonfuls onto waxed paper and refrigerate them until they are firm.

Food For Thought - You can make these more chocolaty by using the special dark cocoa powder and adding 1/2 cup of chocolate chips to the coconut and oatmeal mixture. Just be sure to increase the butter to 3/4 cup.
