Chocolate Oatmeal Cookie Recipe
This Chocolate Oatmeal Cookie Recipe is a slightly unusual recipe for oatmeal cookies - it uses a box of German chocolate cake mix!
The mix is blended with oats, butter and chocolate chips and baked for barely 10 minutes.
These cookies come out soft and chewy, but not at all like cake.

Chocolate Oatmeal Cake Mix Cookies
Ingredients
1 box (18.25 oz) German chocolate cake mix
1 cup butter, room temperature
1/2 cup brown sugar
2 cups oats, quick cooking
1 cup semisweet chocolate chips
2 large eggs
1/4 cup water
1/2 teaspoon vanilla extract
Directions
Preheat the oven to 350F.
Lightly coat 1 or 2 cookie sheets with shortening or cooking spray.
In a large bowl, cream together the brown sugar and the butter with an electric mixer. Add the eggs, one by one, and then add the water and vanilla extract.
Add the cake mix and beat until everything is well blended. Lastly, add the oats and chocolate chips. Make sure they are well combined with the rest of the batter.
Drop by rounded teaspoons onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Let them cool for a few minutes on the cookie sheets when they have finished baking, then remove them to a wire racks to cool completely.
These cookies will last for 5 to 7 days in an airtight container.
Food For Thought - Just for a little variation, try substituting M & M's for the chocolate chips. Peanut butter lovers, try adding peanut butter chips instead of the chocolate, or combine half and half of both of them. Heaven!
