What could be easier? This recipe is flexible enough for you to experiment with different pudding flavors such as vanilla and butterscotch. Mix in your favorite chips or nuts to truly customize your cookies. These happen to freeze well, which is good to know, as you'll find yourself making several batches to keep on hand. Chocolate Peanut Butter Cookie RecipeIngredients1 package (3.9 ounce) instant chocolate pudding mix Preheat the oven to 350F. In a small bowl, combine the flour with the chocolate pudding and the kosher salt. Set the bowl aside. With an electric mixer, cream the softened butter with both the brown and granulated sugar, until the mixture is creamy and smooth. With the mixer on medium, add the eggs, one at a time, and then add the vanilla extract. With a wooden spoon, stir in the pudding mixture - when all the ingredients are well blended, fold in the peanut butter chips. Drop by spoonfuls onto ungreased baking sheets about 2 inches apart. Bake in the preheated oven for 8 to 10 minutes. Let the cookies set on the baking sheets for a few minutes, then remove them to wire racks to cool completely. On Your Own - Just for fun, try this variation: decrease the amount of butter to 1/2 cup, and add 1/2 cup of peanut butter, crunch or creamy. Cream the unsalted butter with the peanut butter, then follow the rest of the instructions. I tried this with extra crunchy peanut butter and I loved them. This is a great cookie recipe!
