Christmas Angel Whispers

Christmas Angel Whispers consist of a sweet, lemony filling between two slightly sweet, lemon flavored shortbread cookies. The combination makes a lemon sandwich cookie that will melt in your mouth.

Christmas Angel Whispers Cookie Recipe

For The Cookie:

1 cup butter
1/2 cup confectioners' sugar
2 cups all-purpose flour
1 teaspoon lemon zest
1/2 teaspoon salt

For The Filling:

1 egg, beaten
2/3 cup white sugar
1 1/2 teaspoons lemon zest
3 tablespoons lemon juice
1 1/2 tablespoons butter

In a medium bowl, cream together the butter and confectioners' sugar until light. Stir in the lemon peel, flour and salt. Roll the dough into two inch logs and chill for about 1 hour.

Preheat your oven to 400 degrees.

Slice 1/4 inch thick cookies from the logs and place on cookie sheets. Bake the cookies for 5 to 8 minutes. Do not over bake! They should be just set and lightly brown but still soft. Remove the cookies from the baking sheets and cool on racks.

To make the filling, combine the beaten egg, sugar, lemon zest, lemon juice and butter in the top of a double boiler. Stir until thick.

Create the sandwiches with two cookies and 1 teaspoon of the lemon filling.
