Coconut Cookie Recipe
This first Coconut Cookie Recipe is easy and quick. It's crunchy of the
outside and chewy on the inside.
The coconut washboards are a little more involved but worth the extra time.

Coconut Cookie Recipe
Ingredients
2 2/3 cups flaked coconut
2/3 cup all-purpose flour
1/2 teaspoon salt
1 cup chocolate syrup
2 teaspoons vanilla extract
Directions
Preheat your oven to 375 degrees. Lightly grease cookie sheets.
Mix together the flaked coconut, all-purpose flour, salt, chocolate syrup and the vanilla extract. Drop the dough by rounded teaspoonfuls onto a lightly greased cookie sheet.
Bake the coconut cookies for 10 minutes or until slightly firm. Remove the cookies from the cookie sheet immediately and cool completely on a wire rack before eating.
Coconut Washboards
Ingredients
2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/3 cups flaked coconut
3/4 cup butter
1 cup packed brown sugar
Directions
Preheat your oven to 375 degrees.
Mix the all-purpose flour with the baking powder, ground cinnamon, ground nutmeg and the salt and set aside.
Cream the butter and gradually the add sugar, beating until light and fluffy. Add the egg and the vanilla and almond extracts. Beat well. Add the flour mixture, blending well. Stir in the flaked coconut.
Divide the dough into two equal parts. Pat each half into a rectangle measuring about 10 x 9 inches. Chill if necessary to facilitate handling.
Cut each rectangle into four strips lengthwise and then cut each strip into ten pieces. Place each piece 2 inches apart on ungreased cookie sheets. Use a floured fork to gently press ridges into the cookies.
Bake the cookies for 8-10 minutes in a preheated 375 degrees oven or until they are golden brown.
The cinnamon, brown sugar and nutmeg give Coconut Washboards a unique flavor. A great Coconut Cookie Recipe.
