Easy Peanut Butter Cookie Recipe

1/2 cup margarine
1 cup peanut butter
1 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

Preheat your oven to 350 degrees.

In a medium bowl cream together the margarine, peanut butter, and sugar. Beat in the eggs one at a time and then stir in the vanilla.

Combine the flour, baking powder and salt. Stir the dry ingredients into the peanut butter mixture. Drop cookie dough by cookie scoop onto the unprepared half sheet pan.

Bake for 8 to 10 minutes in the preheated oven. Allow the cookies to cool on half sheet pan for a few minutes before removing to a wire rack to cool completely.

Do not over bake! If not over baked these peanut butter cookies will be soft and chewy and they will keep that way for a long time.
