Easy Shortbread Cookie Recipe
One of the easiest of all the butter cookies to make is Easy Shortbread, usually called Scottish shortbread.
Although it can be made into individual cookies, a traditional shortbread is baked in a pie or cake pan then cut into wedges.
If you've never tried a shortbread recipe, this could be a great one for you to share with family and friends.
Easy Shortbread Cookie Recipe
Ingredients
3 cups all purpose flour
3 cups cake flour
1/2 cup cornstarch
2 cups unsalted butter, cut into small pieces
1 1/2 cups granulated sugar
Directions
Preheat the oven to 350F.
Combine the all purpose and cake flours, then whisk in the cornstarch and granulated sugar. Add the pieces of cold butter and mix the dough by hand, until the dough resembles coarse cornmeal. Do not use an electric mixer for this.
Roll the dough in a large ball and press it into the bottom of a glass pie plate or cake pan. Pat the dough until it is about 1/2 inch thick.
Place the shortbread into the hot oven and bake until the edges are golden brown, about 20 minutes. When it is ready, remove the shortbread from the oven and lightly perforate wedge markings with a fork.
Remove the shortbread from the baking dish by inverting it onto another plate that you place over the top of your baking dish - the shortbread should come out in one piece. Flip it over one more time and break it apart along the lines of the perforations.
Good To Know - The combination of cake flour and cornstarch with the all purpose flour makes the shortbread dough lighter with a finer crumb than if it was made from only the all purpose flour.
