Fudge Brownies

Fudge Brownies

Fudge brownies were the first bar cookie I ever attempted. That was a long time ago and they ended up in the trash bin.

This recipe is for the ooey gooey type of brownie that I like.

Fudge Brownies

2 c. flour
2 c. sugar
1/2 tsp. Salt
1 stick butter (1/4 pound)
1/2 c. shortening
6 Tbsp. Hershey's cocoa (Dutch Process)
1 c. water
2 eggs, well beaten
1/2 c. buttermilk
1/2 tsp. baking soda
1 tsp. Vanilla

Preheat your oven to 350 degrees.

Thoroughly combine the flour, sugar and salt. In saucepan, combine butter, shortening, cocoa and water. Cook until dissolved. Add to flour mixture. Combine eggs, buttermilk, baking soda and vanilla. Add to chocolate mixture. Chopped nuts may be added if desired.

Pour into greased jellyroll pan, 17 1/2 x 11 1/2-inches. Bake at 350 degrees for about 20 minutes.

Note that even when the brownie is properly baked, it will test "gooey" with a toothpick in the middle due to the richness of the mixture.

You will know they are done when the edges start to become a little crispy and the brownie has raised about 1/4 inch.

After removing from the oven, allow to cool about 30 minutes before spreading a thin layer of icing.

Fantastic Icing for Fudge Brownies

1 stick butter (1/4 pound)
6 Tbsp. milk
1 tsp. vanilla
6 Tbsp. cocoa
1 box confectioners sugar
1/2 c. chopped pecans or walnuts (optional)

Beat together icing ingredients and spread on brownies after they have cooled for at least 30 minutes.
