Gourmet Chocolate Cookie

The ultimate gourmet chocolate cookie! It is 4 kinds of chocolate with very little flour, so get your taste buds ready for a dense, chewy, fudge-like confection that defines what truffles are all about.

Because the dough needs to rest before rolling into balls, make sure to give yourself about 5 hours from start to finish.

Gourmet Chocolate Cookie - Truffle Cookies

Ingredients

4 squares (4 ounces) unsweetened chocolate, chopped
1 cup semisweet chocolate chips
1 cup milk chocolate chips
6 tablespoons unsalted butter
3 large eggs
1 cup granulated sugar
1/2 cup all purpose flour
1 1/2 teaspoons vanilla extract
2 tablespoons cocoa powder, unsweetened
1/4 teaspoon baking powder
1/4 teaspoon kosher salt

Directions

Place a medium bowl over a pan of simmering water. Add the unsweetened chocolate, the semisweet chocolate chips and the unsalted butter. Stir the mixture until the butter and chocolates are melted, then remove the bowl and let the ingredients cool.

With an electric mixer, beat the eggs with the granulated sugar until it is thick and pale yellow. Add the vanilla extract, and then gently mix in the melted chocolates and butter. Blend well.

In a small bowl, combine the flour with the cocoa powder, baking powder and salt. Stir this mixture into the eggs and chocolate, then fold in the milk chocolate chips.

Cover the bowl tightly with plastic wrap and chill for at least 4 hours.

Preheat the oven to 350F. Roll pieces of the chilled dough into 1 inch balls, and place each one on an ungreased cookie sheet, at least 2 inches apart.

Bake for 10 to 12 minutes. Let the cookies set on the sheet pan for a few minutes before removing them to wire racks to cool completely.

Good To Know - The chilling is a very important step in this recipe. One idea is to chill the dough for a couple of hours, or just until you can handle the dough, then roll the balls and freeze them on a cookie sheet.

Once they are frozen solid, you can box them up in an airtight container and keep them frozen until you want to bake them. Not a bad idea around holiday time!
