Lemon Bar Recipe
This lemon bar recipe uses a delicious shortbread crust. Be sure to use the freshest butter you can find for the crust because that's the entire flavoring in it. Also please squeeze fresh lemons.
Lemon Bar Recipe
Crust:
1 c. soft butter
1/2 c. powdered sugar
2 c. flour
Dash of salt
Filling:
4 eggs, beaten
2 c. granulated sugar
1/4 c. flour
6 Tbsp. lemon juice
Preheat your oven to 350 degrees.
Crust:
Combine all of the crust ingredients and mix well. Line a 9 x 13- inch baking pan with aluminum foil leaving a 2" overhang. The overhang will serve as handles to remove the cookie.
Press the shortbread mixture into the pan. Bake at 350 degrees for 15 minutes or until nicely browned and remove from the oven.
Filling:
Combine the flour and the sugar. Mix in the beaten eggs and the lemon juice. Pour on to the slightly cooled crust. Bake at 350 degrees for 25 minutes or until set.
When it has cooled some you can remove it from the pan with the aluminum foil handles and sprinkle with powdered sugar.
This lemon bar recipe makes about 3 dozen delicious squares.
