Lemon Cake Mix Cookie

Whippersnaps Lemon Cake Mix Cookie Recipe

1 pkg. (18 1/2 oz.) lemon cake mix
1 egg
1/2 cup sifted powdered sugar
2 cup (4 1/2 oz. carton) frozen whipped topping, thawed

Grease cookie sheets. Combine the cake mix, whipped topping and the egg in large bowl. Stir until well mixed. Drop by teaspoon into powdered sugar and roll to coat. Place the cookies 1 1/2-inches apart on cookie sheet. Bake at 350 degrees for 10 to 15 minutes until light golden brown. Remove from the cookie sheet. Cool. Makes about 4 dozen cookies.

Calvert Tearoom Easy Lemon Cookie

1 box Super Moist Betty Crocker lemon cake mix
1 cup Wesson oil
2 eggs

Mix all with a spoon and drop by a half teaspoon on greased cookie sheet. Bake at 350 degrees for about 8 to 10 minutes. You do not have to regrease cookie sheets for following bakings. Makes 100 plus very crisp and thin lemon wafer cookies.

You may wish to use a teaspoon per cookie. Store in airtight container.

Lemon Cookie Crisps

1 pkg. lemon cake mix
1/2 cup oil
2 eggs
1 tsp. lemon peel
Pecan halves (if desired)

Preheat oven to 350 degrees.

Combine all the ingredients and mix well. Drop from a teaspoon onto greased a cookie sheet. If desired top each cookie with a pecan half. Bake at 350 degrees for 10 to 12 minutes or until golden. Cool on the cookie sheet about 1 minute and then remove to rack to finish cooling.

Cream Cheese Lemon Cake Mix Cookie

1 pkg. (8 oz.) cream cheese, softened
1 pkg. pound cake mix
2 Tbsp. lemon juice
Grated lemon peel, if available
1 egg, beaten
2 c. powdered sugar
1 tsp. lemon juice
1/2 tsp. Vanilla
Dash of salt

Heat oven to 350 degrees. Reserve 1/4 of the cream cheese. Mix the cake mix, lemon juice and peel, egg and 3/4 of the cream cheese until blended. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until firm, 13 to 15 minutes (cookies won't be brown). Cool slightly before removing from the cookie sheet and cool completely. Mix reserved cream cheese and remaining ingredients until smooth. Frost cookies. Makes about 40.
