Lemon Cookie Recipe
This Lemon Cookie Recipe is just a basic sugar cookie with lemon juice added. It demonstrates the versatility of sugar cookie dough. If you decide to try it use fresh lemon juice. "Lemon Cookies are great with a cup of tea!"
Lemon Cookie Recipe3 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 2 cups sugar 1 cup shortening 2 eggs 1/4 cup lemon juice Additional sugar
Preheat your oven to 350 degrees. Stir together the flour, baking powder and salt. Set aside. In large mixer bowl, beat the sugar and shortening until fluffy. Stir in the dry ingredients, then the lemon juice. Mix well. Chill 2 hours. Shape the lemon cookie dough into 1 1/4" balls. Roll in additional sugar. Place 2" apart onto greased cookie sheets.Flatten. Bake the lemon cookies 8-10 minutes or until lightly browned. The lemon cookie recipe calls for refrigerating the dough for two hours before shaping but it can actually be refrigerated longer than that. Several days at least. It can also be frozen for up to 3 months. This same lemon cookie dough can be rolled and cut out with a cookie cutter giving it even more versatility.
