Lemon Spritz Cookie

This Lemon Spritz Cookie Recipe uses cream cheese and shortening! It's an unusual spritz cookie recipe for sure. The lemon flavor is nice but you can vary the flavoring. Orange is nice.

This is a melt in your mouth cookie and perfect for your Christmas cookie tray.

Lemon Spritz Cookie Recipe

Ingredients

1/2 cup shortening
1 (3 ounce) package cream cheese
1/3 cup white sugar
1 egg yolk
1 teaspoon lemon extract
1 1/2 cups all-purpose flour
1/2 teaspoon salt

Directions

Preheat oven to 400 degrees F.

In a medium bowl, cream together shortening, cream cheese, and sugar until light and fluffy. Beat in the egg yolk, and lemon extract.

Combine the flour and salt; gradually mix into the creamed mixture in three additions, mixing well after each addition.

Load the dough into a cookie press, and press cookies onto an ungreased half sheet pan.

Bake the cookies for 8 to 10 minutes in the preheated oven, or until lightly golden.

Let the cookies cool on the half sheet pan for a few minutes before transferring to wire racks to cool completely.

This is an outstanding cookie! The consistency is perfect for the cookie press. Add a little green food coloring and use the Christmas tree die for great looking as well as great tasting Christmas cookies.
