Maple Shortbread
Maple Shortbread is my favorite! If you have a list of favorite recipes for shortbread cookies that is quick and easy, you need to add this one to it.
It's basic shortbread dough with the addition of maple syrup.
The maple syrup gives the dough a little extra flavor and sweetness without adding lots of sugar.
A quick dusting of powdered sugar on the still-warm cookies may be all you need for a tasty and light dessert treat for after school or special company.
Maple Shortbread Cookie Recipe
Ingredients
2 cups all purpose flour
1 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup maple syrup
1/4 teaspoon kosher salt
Directions
Cream the butter and granulated sugar with the maple syrup with an electric mixer until smooth.
Mix the kosher salt with the flour, and gradually pour it into the creamed butter and sugar. Beat the dough until it is just blended. Wrap the dough in plastic and refrigerate for 30 minutes or an hour.
Preheat the oven to 350F.
Unwrap the refrigerated dough and form balls the size of walnuts. Lay each ball on an ungreased baking sheet and lightly flatten each one with the back of a wooden spoon.
Bake the cookies in the preheated oven for 10 to 12 minutes - they should just be starting to turn golden. Cool completely before storing in an airtight container.
Food For Thought - You can fancy these up a little with a walnut or pecan half gently pressed into the top of each flattened cookie before baking.
For a festive holiday look, top each one with a colorful candy-coated almond or sprinkling of silver balls.
