Mexican Wedding Cookie Recipe1 1/2 cup butter, room temperature For coating the baked cookies you'll need: 3/4 cup powdered sugar Preheat your oven to 350 degrees. Cream the butter, powdered sugar and vanilla at medium high speed until it's light and fluffy. In a separate bowl thoroughly combine the flour and the salt. Mix the flour into the butter mixture 1/3 at a time incorporating very well after each addition. Place the dough in the refrigerator until completely chilled. Shape the dough into one-inch balls and place on a lightly greased cookie sheet about 2 inches apart. Bake the cookies in a 350-degree oven for about 15 minutes or until lightly browned.
