No Bake Chocolate Cookie
This No bake chocolate cookie is a new classic refrigerator cookie - quick to make and even faster to disappear! Rolled oats and peanut butter give them a protein kick, and the chocolate drink mix powder and milk make a natural combination. This dough is quickly boiled then dropped by spoonfuls and refrigerated. You probably have all or most of the ingredients on hand, so this is the perfect last-minute treat when you have company coming and not much time. Chocolate No Bake CookiesIngredients3 cups rolled or instant oats Line 1 or 2 cookie sheets with waxed paper. In a medium saucepan, combine the sugar, butter and milk. Bring the pan to a boil over medium heat, and whisk the ingredients until they come to a boil. Let it boil for one minute, then remove the pan from the heat. Stir in the peanut butter and vanilla, then add the rolled oats. The mixture should be loose enough that it will drop from a spoon. If it is too stiff, add a little more milk. Drop the dough by spoonfuls onto the waxed paper, and refrigerate the cookies until they are cool. To store, layer them on sheets of waxed paper in an airtight container. Food For Thought - If you are a true peanut butter fiend, leave out the unsalted butter altogether and use 1 cup of peanut butter.
