No Bake Chocolate Oatmeal Cookies

I made up a batch of cookies using this no bake chocolate oatmeal cookies recipe recently. They're really easy, kiddy friendly and taste amazingly like Reese's Peanut Butter Cups.

To be honest I thought the two cups of sugar made them to sweet. But I took a bunch to work and my co-workers gobbled 'em down and all of them told me I was wrong, that they're not to sweet.

Oh well. It's a matter of taste I guess. In the future if I make them for me I'll use 1 1/2 cups of sugar. If I make them to give away I'll use 2.

No Bake Chocolate Oatmeal Cookies Recipe

1 stick Land 'O Lakes butter
1/2 cup Nestle semi-sweet chocolate chips (6 ounces)
2 cups sugar
1/2 cup milk
3/4 cup Smuckers All Natural peanut butter
3 cups quick cooking oatmeal
1/2 tsp. vanilla flavoring

Measure out the oatmeal into a large mixing bowl.

Melt the butter in the milk in a saucepan on medium heat. When the butter has melted then stir in the sugar and continue to stir until the sugar is dissolved.

Remove from the heat and stir in the vanilla and chocolate chips. Add the peanut butter and continue to stir until the chocolate chips are completely melted and all the ingredients are well incorporated.

Pour the chocolate mixture over the oatmeal and mix until you can no longer see any of the color of the oatmeal. Everything is chocolate.

Drop by teaspoonful onto a parchment paper lined cookie sheet or waxed paper and pat into a cookie shape if you like. Cool until set.

This no bake chocolate oatmeal cookie recipe makes about 24 good-sized cookies.

Be sure to use a non-stick surface for the cookies to cool on because as the chocolate cools it really grabs hold.

When I filled up my only Silpat sheet I put some on my half sheet pan and had to use a spatula to break them free and broke most of them in the process.
