No Bake Oatmeal Cookie

A No Bake Oatmeal cookie like No Bake Cocoa Quickies or No Bake Cow Patty Cookies should be in everybody’s recipe file. No bake for easy, oatmeal for healthy and cookie for good tasting.

Cocoa Quickies

(No Bake Oatmeal Cookie)

Oatmeal Cookies Ingredients

1/2 cup milk
1/2 cup butter
2 cups white sugar
6 tablespoons unsweetened cocoa powder
3 cups rolled oats
1 cup shredded coconut (optional)

Oatmeal Cookies Directions

Place the milk, butter, sugar, and cocoa in a medium sized saucepan. Bring the mixture to a full rolling boil and boil for one minute. Remove from the heat and stir in the rolled oats. Mix in the shredded coconut, if desired.

Drop by teaspoonfuls onto waxed paper. Let stand until set. Quickies may be refrigerated to speed up the setting process.

Cow Patty Cookies

(No Bake Oatmeal Cookie)

Oatmeal Cookies Ingredients

2 cups white sugar
5 tablespoons unsweetened cocoa powder
1/2 cup unsalted butter
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract
3 cups quick cooking oats
1/2 cup chopped walnuts
1/2 cup milk

Oatmeal Cookies Directions

Line baking sheets with wax paper and set aside.

Combine the sugar and unsweetened cocoa powder in a large saucepan. Stir in the milk, butter and the peanut butter. Cook and stir over medium heat until the butter melts and the mixture is well combined, about 5-20 minutes. Remove from the heat.

Stir in the vanilla, quick cooking oats and the chopped walnuts, and mix thoroughly.

Take a teaspoon and scoop out a spoonful of the mixture. Drop the spoonful onto the waxed paper-covered baking sheet. Repeat with the rest of the mixture. Place the oatmeal cookies in the refrigerator until the cookies are cooled and set. Store the cookies in an airtight container.
