No Bake Peanut Butter Cookie

This no bake peanut butter cookie is a delicious blend of peanut butter and butterscotch along with the crunch of cornflakes and peanuts.

If you are time pressed you can have cookies ready is less than 15 minutes without heating up the kitchen. You just can't be beat that.

No Bake Peanut Butter Cookie

2 six-ounce packages of butterscotch chips
1 1/2 cups of chunky peanut butter
4 to 5 cups of corn flakes
1 cup dry roasted peanuts

Melt the butterscotch chips and peanut butter in the microwave stirring occasionally to blend. Stir in the corn flakes and peanuts. Drop by tablespoons full onto parchment or waxed paper.

You can vary this recipe by substituting chocolate chips for the butterscotch chips. Delicious!
