It's hard to believe that Oatmeal Shortbread is not only rich and buttery but is also quick and easy! This shortbread is all of that and more. Perfect for parties and gift-giving, this is also the perfect morning treat with coffee - not too sweet, and full of good, chewy oats. Of course, nothing says it has to stay so simple. Drizzle a little melted dark chocolate over the top of the shortbread, or cut them into squares to roll in spiced sugar. A drop or two of vanilla extract can work wonders with such a simple recipe, plus your kitchen will be filled with the most tempting fragrance - you better start doubling the recipe! Rich and Buttery Oatmeal Shortbread Cookie RecipeIngredients1 1/2 cups all purpose flour Preheat the oven to 325F. Cream the softened butter and granulated sugar until light and fluffy with an electric mixer. Whisk together the all purpose flour and salt. Pour the flour mixture into the beaten sugar and butter and beat until well mixed. Stir in the oats and blend well. Press the dough into a 9 x 13 inch baking pan that has been coated with shortening or cooking spray. Lightly prick the dough with the tines of a fork, and bake the shortbread in the hot oven for 30 to 35 minutes, or until it is lightly browned. Let the shortbread cool completely before cutting into long bars or squares. Good To Know - Shortbread can shatter easily if care is not taken when cutting after cooking. It's best to score the outlines of the shapes you want to cut with the tip of a small knife before baking - then just follow the scored lines to cut it when it's cool.
