Peanut Butter Icing Recipe

This peanut butter icing recipe is suitable for any cookie but it's especially good on chocolate. There's just something about peanut butter and cookies and even more about peanut butter and chocolate.

You can't make a good cookie or a good icing with inferior ingredients. Read the list of ingredients on your peanut butter.

I prefer and highly recommend Smuckers All Natural. Its list of ingredients is simply peanuts and salt. Nothing else is added and nothing is taken away. Some brands take away the peanut oil and add back less expensive oils.

Peanut Butter Icing Recipe

1 1/2 cup sugar
1/3 cup water
2 egg whites
1/2 tsp. cream of tartar
1/4 tsp. Salt
1 cup Smuckers All Natural peanut butter

Combine all the ingredients except the peanut butter in the top of a double boiler. Beat with an electric mixer until they are thoroughly mixed.

Place over rapidly boiling water and beat constantly with the mixer for 7 to 10 minutes or until it holds a peak. Remove from the heat and fold in the peanut butter. Beat for 3 more minutes.
