Peanut Cookie Bars

These are peanut cookie bars with peanuts instead of peanut butter. There's a gozillion cookie bars with peanut butter but there's not so many with peanuts.

Peanut Cookie Bars

1/2 cup margarine (soft)
2 1/4 cup biscuit quick baking mix
1 3/4 cup brown sugar (do not pack)
1 tsp. vanilla extract
2 eggs, slightly beaten
1 1/2 cup chopped peanuts
2 Tbsp. boiling water

Preheat your oven to 350 degrees.

Mix the margarine and the biscuit quick baking mix together until crumbly like piecrust. Add the boiling water and beat vigorously until the dough is soft.

Add the sugar and mix well. Add the vanilla and eggs and then mix well. Add 3/4 cup of the peanuts to mixture.

Spread the mixture onto a well-greased and floured cookie sheet (17 x 14 or 18 x 12-inch) and sprinkle the remaining peanuts on top.

Bake at 350 degrees for 15 to 17 minutes. Loosen the sides as soon as the pan is removed from oven. Let the cookies cool in the pan and then cut.

Seven Layer Peanut Cookie Bars

1 cup graham cracker crumbs
1/4 cup melted butter
1 cup flaked coconut
1 (6 oz.) pkg. Butterscotch chips
1 (6 oz.) pkg. chocolate chips
1 (14 oz.) can sweetened condensed milk
1 cup chopped roasted peanuts

Preheat your oven to 325 degrees.

Combine the graham cracker crumbs and the melted butter. Press the mixture into the bottom of an 8-inch square baking dish.

Add in layers: coconut, butterscotch chips and chocolate chips. Add the sweetened condensed milk and spread it to the edges of the dish. Top with the chopped peanuts.

Cover the dish with aluminum foil.

Bake in a preheated 325 degrees oven for 30 minutes. Turn the oven off. Remove the foil from the dish and return it to the oven for a few minutes.

When completely cooled, cut into small bars. Makes 32 one-inch squares.
