Pecan Clusters
Pecans are my favorite nuts and Pecan Clusters is a great way to eat them. Some recipes refer to them as candy but as far as I'm concerned they are no bake cookies. At any rate they're delish!
Easy Pecan Clusters Recipe
7-ounce jar marshmallow cream
3/4 pound chocolate kisses
2 1/2 cups sugar
6-ounce can evaporated milk
1/2 stick butter
2 cups pecan halves
Place the marshmallow cream and the chocolate kisses into a large bowl and set it aside.
Combine the sugar, milk, and butter in a saucepan. Bring the mixture to a boil and cook for 8 minutes. Pour over the marshmallow and chocolate chips, stirring until well blended.
Stir in the pecans. Drop by teaspoonfuls onto waxed paper.
Chocolate Pudding Pecan Clusters Recipe
1 pkg. chocolate pudding powder (not instant)
1 cup sugar
1/2 cup evaporated milk
1 Tbsp. Butter
1 tsp. Vanilla
1 cup chopped pecans or desired amount
Cook and stir all the ingredients except the pecans to a full all-over boil. Lower the heat and keep stirring while the mixture boils slowly for 3 minutes. Remove from the heat.
Add the pecans and beat until the mixture is thick and loses its shine. When it starts to thicken, drop from a teaspoon onto waxed paper. Work quickly.
Makes 24 Pecan Clusters.
